  • Chardonnay (oaked) — If you prefer white, a rich, buttery Chardonnay pairs beautifully, especially with roasted tenderloin.

  • Merlot — Soft tannins and plum flavors enhance the beef without overpowering it.

  • Bordeaux Blend — A classic red blend with structure and complexity that matches the tenderloin’s elegance.

  • Roasted Beef Tenderloin (Oven Method)

    Ingredients:

    • Beef tenderloin (trimmed)

    • Olive oil

    • Salt & freshly ground black pepper

    • Fresh garlic (optional)

    • Fresh herbs like rosemary or thyme (optional)

    Instructions:

    1. Preheat oven to 425°F (220°C).

    2. Pat the tenderloin dry with paper towels. Rub it all over with olive oil, salt, and pepper. Add minced garlic and herbs if you like.

    3. Sear the tenderloin in a hot skillet over medium-high heat for 2-3 minutes per side until browned.

    4. Transfer the tenderloin to a roasting pan or oven-safe skillet.

    5. Roast in the oven for about 20-30 minutes, or until an instant-read thermometer inserted into the thickest part reads:

      • 120°F (49°C) for rare

      • 130°F (54°C) for medium-rare

      • 140°F (60°C) for medium

    6. Remove from oven, tent with foil, and let rest for 10-15 minutes before slicing.
